No Bake Granola Laddoos

Our granola ladoos are full of oats and nuts and are full of nutrients. These bite-sized snacks are sweetened with a date paste- which has a lower glycemic-index and more fibre than syrups, meaning they release sugar into the blood more slowly, giving you a more stable source of energy. This recipe is super easy- the whole thing takes less than 10 minutes.

INGREDIENTS

1 cup pitted dates 1 ½ cups rolled oats 1 cup chopped dried figs 3 tbsp jaggery liquid (you can buy a great organic one from Happy Healthy Me) 3 tbsp all natural almond butter (we love Peels Nut Butter)

Tip:

You can spread these out in a butter-paper lined tray and cut into bars if you like- but we’ve rolled them into bite-sized balls so you can check in with your hunger after each ball. This will help you to eat the right amount for your own hunger and energy needs on a particular day, some days one might be enough, other days you might need a few!

What To Do

  1. Put the dates into a blender and process until it becomes a smooth, spreadable paste. Add a splash of water if it is too dry and lumpy.
  2. Put the date paste in a bowl, add the oats and chopped figs and stir well to combine. This may take a fair bit of stirring 🙂
  3. Mix the jaggery liquid and almond butter together to form a thick paste, then combine the paste with the oats and dates mixture with a wooden spoon.
  4. Once it all comes together, scoop out a spoonful of the mix and roll it between your palms to form a ball.Repeat for the entire mixture, and place them in the freezer for 30 minutes.
  5. Take them out of the freezer, take pictures of where and when you eat these laddoos on the go- and tag @copperandcloves. These will store for about a month in the freezer and for 2 weeks in the fridge.
