- Put the dates into a blender and process until it becomes a smooth, spreadable paste. Add a splash of water if it is too dry and lumpy.
- Put the date paste in a bowl, add the oats and chopped figs and stir well to combine. This may take a fair bit of stirring 🙂
- Mix the jaggery liquid and almond butter together to form a thick paste, then combine the paste with the oats and dates mixture with a wooden spoon.
- Once it all comes together, scoop out a spoonful of the mix and roll it between your palms to form a ball.Repeat for the entire mixture, and place them in the freezer for 30 minutes.
- Take them out of the freezer, take pictures of where and when you eat these laddoos on the go- and tag @copperandcloves. These will store for about a month in the freezer and for 2 weeks in the fridge.
No Bake Granola Laddoos
Our granola ladoos are full of oats and nuts and are full of nutrients. These bite-sized snacks are sweetened with a date paste- which has a lower glycemic-index and more fibre than syrups, meaning they release sugar into the blood more slowly, giving you a more stable source of energy. This recipe is super easy- the whole thing takes less than 10 minutes.
INGREDIENTS
1 cup pitted dates
1 ½ cups rolled oats
1 cup chopped dried figs
3 tbsp jaggery liquid (you can buy a great organic one from Happy Healthy Me)
3 tbsp all natural almond butter (we love Peels Nut Butter)
