- Preheat oven to 180C
- Place the sweet potato on a baking tray
- Drizzle with extra virgin olive oil, salt and pepper and cinnamon.
- Toss the sweet potato in the oil salt and pepper until each piece is evenly coated
- Bake for 30 minutes, turn over half-way through.
- Remove from oven. Let them cool.
- To serve, top with pea smash and cherry tomatoes for a protein-packed snack that will keep you full and energetic or use to scoop up a dip like cowpea hummus.
