Baked Sweet Potato Chips

Sweet potatoes are extremely nutritious, they have twice the fibre than a regular potato, more potassium than a banana and are packed with vitamin C. Say goodbye to those those packaged chips and give these homemade chips a shot with our signature pea smash for a nutrition packed snack.

INGREDIENTS

2 sweet potato cut into 2 cm rounds 1/2 tablespoon extra virgin olive oil 1/2 teaspoon cinnamon powder 1 teaspoon each salt and pepper

What To Do

  1. Preheat oven to 180C
  2. Place the sweet potato on a baking tray
  3. Drizzle with extra virgin olive oil, salt and pepper and cinnamon.
  4. Toss the sweet potato in the oil salt and pepper until each piece is evenly coated
  5. Bake for 30 minutes, turn over half-way through.
  6. Remove from oven. Let them cool.
  7. To serve, top with pea smash and cherry tomatoes for a protein-packed snack that will keep you full and energetic or use to scoop up a dip like cowpea hummus.
